  • 2 cups uncooked elbow macaroni
  • 2 packages (5 ounces each) Ellsworth Hickory Bacon Cheddar Cheese Curds, coarsely chopped (about 2 1/2 cups)
  • 4 fully cooked bratwurst links, halved lengthwise and sliced
  • 1 cup diced sweet pickles
  • 1 cup diced red onion
  • DRESSING
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon sweet pickle juice
  • 2 teaspoons sugar
  • 1 teaspoon hot pepper sauce
  • Salt and pepper to taste
  • Minced fresh chives, optional

  2. Combine the macaroni, cheese curds, bratwursts, pickles, and red onion in a large bowl.
  3. Whisk the dressing ingredients in a medium bowl. Season with salt and pepper to taste. Pour the dressing over macaroni mixture; gently toss to coat.
  4. Cover and refrigerate for at least 1 hour or until serving.
  5. Garnish with chives if desired.
