  • 4 medium russet potatoes
  • 1 Tbsp. unsalted butter, melted
  • ½ tsp. kosher salt
  • 2 slices applewood smoked uncured bacon, chopped
  • ½ medium green bell pepper, chopped
  • 1 baby bella mushroom, thinly sliced
  • ½ cup marinara sauce
  • 1 cup finely shredded low-moisture part-skim mozzarella
  • ¼ cup grated Parmesan cheese
  • 2 tsp. fresh chopped basil

  1. Preheat 3.3-quart or larger air fryer 5 minutes at 400°. Brush potatoes with butter; sprinkle with salt and air fry 40 minutes or until easily pierced with a knife.
  2. In small skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; with slotted spoon, transfer to paper towel-lined plate. In same skillet, with drippings, cook pepper and mushroom 5 minutes or until tender-crisp, stirring occasionally.
  3. Cut a 4-inch slit in the top of each potato; fill with sauce, pepper mixture and cheeses. In 2 batches, if necessary, air fry potatoes 5 minutes or until golden brown and cheese is melted; sprinkle with basil and bacon. Makes 4 loaded potatoes.
