  • 2 ½ cups seltzer water
  • 2 cups all-purpose flour
  • 2 tsp. cornstarch
  • 2 packages (8 ounces each) baby bella mushrooms, stems removed
  • 2 cups panko breadcrumbs
  • ¼ cup cayenne pepper hot sauce
  • ¼ cup unsalted butter, melted
  • ¼ cup sliced green onions
  • 1 cup blue cheese dressing
  • Carrot sticks and/or celery sticks for serving (optional)

  1. Preheat a 3-quart air fryer to 400° for 5 minutes. In large bowl with lid, whisk water, flour and cornstarch. Add mushrooms; cover and shake. Let stand 20 minutes, shaking twice.
  2. In large zip-top plastic bag, add breadcrumbs and mushrooms; seal bag, pressing out excess air, and shake to coat mushrooms. In 2 batches, if necessary, air fry mushrooms 10 minutes or until golden brown, turning once.
  3. In separate large bowl, whisk hot sauce and butter; add hot mushrooms and toss. Makes about 4 cups mushrooms.
  4. Serve mushrooms sprinkled with onions along with dressing for dipping, and celery and/or carrots, if desired.
