  • 4 medium russet potatoes
  • 1 Tbsp. unsalted butter, melted
  • ¾ tsp. kosher salt
  • ½ pound ground beef
  • 2 Tbsp. taco seasoning
  • 1 large avocado, peeled and pitted
  • 1 Tbsp. finely chopped red onion
  • 1 Tbsp. fresh lime juice
  • 1 cup finely shredded Mexican style blend cheese
  • ¼ cup sour cream
  • ¼ cup salsa

  1. Preheat 3.3-quart or larger air fryer 5 minutes at 400°. Brush potatoes with butter; sprinkle with 1/s teaspoon salt and air fry 40 minutes or until easily pierced with a knife.
  2. In a large skillet, cook beef over medium-high heat 5 minutes or until browned, breaking up beef with side of spoon. Stir in taco seasoning and 1/3 cup water; cook 2 minutes or until liquid is absorbed, stirring occasionally. Makes about 2 cups.
  3. In a small bowl, mash avocado, onion, lime juice and remaining 1/4 teaspoon salt with fork. Makes about 1 cup.
  4. Cut a 4-inch slit in the top of each potato; fill with beef mixture and sprinkle with cheese. In 2 batches, if necessary, air fry potatoes 5 minutes or until golden brown and cheese is melted; top with sour cream, salsa and guacamole. Makes 4 loaded potatoes.
