  • 1 (3-ounce) package sliced prosciutto, torn into 2-inch pieces
  • ½ (10-ounce) package cherry tomatoes, halved
  • ½ cup packed baby arugula
  • 4 (3/4-inch-thick) slices ciabatta bread
  • Nonstick cooking spray
  • ½ cup ricotta cheese
  • Cracked black pepper for garnish, optional

  1. Prepare outdoor grill for indirect grilling over medium-high heat. In medium bowl, toss prosciutto, tomatoes, and arugula.
  2. Spray both sides of bread with cooking spray. Place bread on hot grill rack over lit side of grill; cover and cook 3 minutes or until grill marks appear, turning once. Turn off 1 side of grill.
  3. Spread toasts with cheese; top with prosciutto mixture. Place toasts on hot grill rack over unlit side of grill; cover and cook 7 minutes or until heated through and top is lightly browned. Makes 4 toasts.
  4. Serve toasts garnished with pepper, if desired.
