Don’t think “fauxtatoes” are your thing? You might be surprised to know that when prepared correctly, mashed cauliflower has a very similar texture to mashed potatoes, not to mention a bit of a buttery taste. Don’t believe us? What you need:
- 1 head cauliflower, cored and cut into small florets
- 1 ½ chicken broth (vegetable broth works too)
- ¼ cup grated Parmesan cheese
- ¼ cup chopped fresh chives
- Salt and pepper to taste
What to do:
- In a medium saucepan, combine the cauliflower and chicken broth and bring to a boil.
- Reduce the heat to a simmer, cover with a lid, and cook for 15 to 20 minutes or until the cauliflower is tender, but not completely falling apart.
- Using a slotted spoon, place the cauliflower to a food processor and puree until silky smooth.
- Stream in broth if needed to make cauliflower smoother.
- Transfer to a bowl and stir in the Parmesan and chopped chives and season with salt and black pepper. Serve warm.
