Looking for healthier tailgate recipes? This creamy roasted veggie and potato salad is the perfect side to bring to your next tailgate.

  1. Preheat the oven to 450 degrees.
  2. Add potatoes, radishes, broccoli, and cauliflower to a sheet pan.
  3. Toss veggies in a little avocado oil, salt, and pepper.
  4. Roast for 25-30 minutes or until veggies are tender with a fork.
  5. Once veggies are finished, let cool before assembling the rest of the salad.
  6. Add roasted veggies and cooked bacon to a large mixing bowl.
  7. In a separate bowl, combine mayo/Greek yogurt, dijon mustard, lime juice, garlic powder, onion powder, salt, and pepper.
  8. Gently stir sauce mixture into veggies.
  9. Refrigerate for at least one hour before serving.
