Pesto with Sweet Potato Crostini

- Preheat oven to 450 degrees.
- Wash and peel the sweet potatoes, cut into ¼-½ inch thick coins. Brush with olive oil, sprinkle with salt and pepper if desired.
- Place on a baking sheet and roast for 10-15 minutes, flip and roast for an additional 10 minutes or until crispy.
- Blend the first three ingredients.
- Add remaining ingredients, except olive oil. Blend.
- Add olive oil and blend until desired consistency is reached.
- Serve on sweet potatoes and top with tomatoes and feta.
