Part of our Freezer Meal prep series, these California Shrimp Tacos spice up any weeknight dinner and the work has been done ahead of time!

  1. Label gallon-sized freezer bag with recipe title and today's date.
  2. In a quart-sized bag, combine the Mexicorn, tomatoes, black beans, cilantro, garlic and pepper. This is your salsa.
  3. In a separate quart-sized bag, combine guacamole and salad dressing.
  4. In a third quart-sized bag add shrimp.
  5. In small bag, place chili powder and Cajun seasoning.
  6. Place all smaller bags in the gallon freezer bag.
  1. Thaw.
  2. Drain any liquid from shrimp bag. Toss shrimp with contents of spice bag.
  3. In a large nonstick skillet coated with cooking spray, saute shrimp until pink, about 5 minutes.
  4. Divide shrimp evenly among taco shells.
  5. Top with 1/3 cup corn salsa; drizzle with 1 tbsp guacamole mixture.
