Part of our Freezer Meal prep series, these Cashew Chicken Lettuce Wraps take convenience the extra mile when you can prep them ahead of time!

  • 1 pound 99% lean ground chicken
  • 1 tsp ginger paste
  • 1 tbsp minced garlic
  • ½ cup chopped onion
  • ½ cup chopped green pepper
  • 2 tbsp coconut aminos
  • 2 tbsp hoisin sauce
  • 1 tsp oyster sauce
  • 2 tsp sriracha
  • ½ cup chopped cashews
  • 1 can (8 oz.) water chestnuts
  • 1 head of romaine lettuce

Part of our Freezer Meal prep series, these Cashew Chicken Lettuce Wraps take convenience the extra mile when you can prep them ahead of time!

  1. Label gallon freezer bag with name of recipe and today's date.
  2. In a separate gallon-sized bag, combine chicken, ginger, garlic, onion, peppers, aminos, hoisin sauce, oyster sauce and sriracha. Remove air and seal.
  3. Place cashews in sandwich bag.
  4. Label can of water chestnuts. DO NOT freeze can.
  5. Place chicken bag and cashew bag inside labeled bag.
  6. Freeze labeled bag and store can water chestnuts at room temperature.
  1. Thaw frozen bag in refrigerator 48 hours prior to cooking.
  2. Heat wok (or skillet) to medium-high. Add 2 tbsp canola oil and move pan around to coat.
  3. Add contents of chicken bag to hot pan and stir fry until chicken is browned and cooked through.
  4. Drain and chop water chestnuts. Add chopped water chestnuts and cashews to pan. Stir to combine. Spoon onto lettuce cups.
