  • 8 pound standing rib roast
  • 1 cup butter, softened
  • 1/4 cup fresh rosemary, minced
  • 8 cloves garlic, minced
  • 1 tbsp fresh ground black pepper
  • 1 tbsp sea salt
  • 2 tsp ground thyme

This easy Rib Roast practically cooks by itself needing little attention. Recipe featured in our 2019 Holiday Gatherings issue as part of our Holiday Handbook.

  1. Preheat oven to 450°.
  2. Let rib roast come to room temperature (this will take 3-4 hours).
  3. Combine butter, rosemary, garlic, salt, pepper, and thyme to create a paste.
  4. Rub paste all over rib roast, then place in a roasting dish, bone side down.
  5. Roast for 15 minutes, then reduce the temperature to 325° and cook for about 21/2 hours. Check the temperature of the meat by inserting an instant-read thermometer into the center of the roast. It should be 125° for medium-rare and 130° for medium.
  6. Remove from oven and tent with aluminum foil. Let rest, tented, for 15 minutes.
