This easy Rib Roast practically cooks by itself needing little attention. Recipe featured in our 2019 Holiday Gatherings issue as part of our Holiday Handbook.
- Preheat oven to 450°.
- Let rib roast come to room temperature (this will take 3-4 hours).
- Combine butter, rosemary, garlic, salt, pepper, and thyme to create a paste.
- Rub paste all over rib roast, then place in a roasting dish, bone side down.
- Roast for 15 minutes, then reduce the temperature to 325° and cook for about 21/2 hours. Check the temperature of the meat by inserting an instant-read thermometer into the center of the roast. It should be 125° for medium-rare and 130° for medium.
- Remove from oven and tent with aluminum foil. Let rest, tented, for 15 minutes.
