Try this healthy and bright Mexican corn salad at your next bbq.

  • 1 can Mexican corn
  • 1 can kidney beans, drained
  • 1 can black beans, rinsed and drained
  • 1 can cannellini beans, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • ½ cup red onion, diced
  • 2 Tbsp red wine vinegar
  • ¼ cup olive oil
  • 2 Tbsp fresh lime juice
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp white sugar (more to taste if you prefer it a little sweeter)
  • 1 tsp chili powder
  • • ½ Tbsp ground cumin
  • • ¼ tsp cayenne pepper (more to taste if you desire more heat)
  • • 1 tsp ground black pepper
