This healthy sandwich is packed with flavor! Add optional egg whites or light-flavored deli meats for a more protein-packed meal.

  • 8 slices whole grain bread
  • 4 egg whites, optional
  • 4 slices deli chicken or turkey, optional
  • 2 oz. goat cheese, at room temperature
  • 1 large cucumber, sliced (about 1 ¼ cup)
  • 2 fresh Hass avocados, halved, pitted, peeled and sliced
  • 2 tsp fresh lemon juice
  • 1 cup alfalfa sprouts
  • 1/8 tsp black pepper

This healthy sandwich is packed with flavor! Add optional egg whites or light-flavored deli meats for a more protein-packed meal.

  1. Spread the goat cheese evenly on all of the slices of bread.
  2. Take one of the slices of bread and top with cucumber and avocado slices.
  3. Drizzle fresh lemon juice over the avocado.
  4. Add sprouts and season with black pepper.
  5. Add cooked egg whites or deli meat (optional).
  6. Place the other piece of bread, goat cheese side down.
  7. Repeat with the other sandwiches. Serve immediately.
