A healthy alternative to mashed potatoes, seasoned with fresh Parmesan & chives.

  • 1 head cauliflower, cored and cut into small florets
  • 1 ½ chicken broth (vegetable broth works too)
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped fresh chives
  • Salt and pepper to taste

A healthy alternative to mashed potatoes, seasoned with fresh Parmesan & chives.

  1. In a medium saucepan, combine the cauliflower and chicken broth and bring to a boil.
  2. Reduce the heat to a simmer, cover with a lid, and cook for 15 to 20 minutes or until the cauliflower is tender, but not completely falling apart.
  3. Using a slotted spoon, place the cauliflower to a food processor and puree until silky smooth.
  4. Stream in broth if needed to make cauliflower smoother.
  5. Transfer to a bowl and stir in the Parmesan and chopped chives and season with salt and black pepper. Serve warm.
