  • 2 bunches trimmed carrots
  • 1 tbsp olive oil
  • 1 tsp chopped thyme leaves
  • a few thyme sprigs
  • salt and pepper

  1. Drizzle olive oil on carrots, and toss on a rimmed baking sheet with chopped thyme and thyme sprigs; season with salt and pepper.
  2. Roast at 425 degrees until the carrots are tender, 25 to 30 minutes.
