You could eat this as an entree or side salad. It's so good and filling. Recipe featured in our 2017 Summer Gatherings issue.

  1. Lightly oil the cut side of each avocado half and lemon half, then grill until the avocados have grill marks and are heated through and the lemons are lightly charred and caramelized.
  2. Mix parsley, thyme, chives, and basil with olive oil and salt. Top the avocado halves with the herbs and tomatoes, then squeeze the grilled lemons over the topped avocado.
