Valentine's Day is near and that means an extra dose of temptation in the form of chocolate, candy and more chocolate! While it's true that we aren't likely to pass on ALL of the chocolate...this year we plan to enjoy more of that something sweet-guilt free. Sweet Berry FroYo Bites are here to save Valentine's Day! 

Ok, maybe that's a bit dramatic, but truly these frozen dessert bites are that good. It's starts with the crust. Crushed almonds, coconut oil & coconut sugar. Amazing. Sweet, but not over the top and pairs perfectly with the greek yogurt & berries. Do allow plenty of time for the bites to freeze. You can't rush this one. What you need: 

  • ½ cup almonds
  • 3-4 tablespoons coconut sugar (depending on desired sweetness)
  • 4 tablespoons coconut oil, melted
  • 1 ½ cups of plain Greek yogurt
  • 4 tablespoons honey
  • 2 cups fresh chopped raspberries (can use other berries)
  • 12 cup muffin tin and liners (recommend silicone liners)
  • What to do: 
    1. Line a 12-cup muffin tin with silicone cupcake liners
    2. Add almonds to food processor, and process till finely chopped.
    3. In a small bowl, stir together almonds, coconut sugar, and coconut oil. Spoon a small amount into the bottom of each muffin cup.
    4. In a medium bowl, mix together yogurt and honey. Spoon approx. 2 tablespoons into each muffin cup, to cover the crust.
    5. Top with fresh chopped raspberries. Freeze until firm, about 4 to 6 hours.
