Super Sweet Potato Bites

2 medium to large sweet potatoes
2 medium avocado
1 jalapeño
- 1 clove garlic
- 3 tbsp red onion
- 1 bunch cilantro
- 1 lime
- 4-6 slices of bacon
- ½ cup feta cheese
- Olive oil
- Salt and pepper
- Preheat the oven to 400°. Wash and dry the sweet potatoes, and slice them into 1/2-inch thick rounds. Lightly coat both sides of the sweet potato slices with olive oil, sprinkle with salt, and place on a baking sheet. Bake for 20 minutes, flip, then bake for another 10 to 15 minutes, or until rounds are cooked through and crispy on the edges. Place sweet potato rounds on a serving platter and allow them to cool.
- Cook the bacon over medium heat, flipping occasionally, until crispy, about 5 minutes. Transfer bacon to a cutting board and chop into pieces once cool enough to handle.
- Mince the garlic, dice the red onion and jalapeño, and roughly chop the cilantro leaving some extra for garnishing. Cut the avocados and scoop into a large bowl.
- Add all ingredients for the guacamole to the bowl with avocado and mash with a fork until it all ingredients are mixed together and guacamole is still slightly chunky. Stir in juice of one lime and mix
- Top sweet potato rounds with guacamole, crispy bacon, crumbled feta, and cilantro. Enjoy!
