Who’s ready to grill out? Grilling season is here and it’s serious business! This summer we are making room on the grill for more than burgers & brats. There is no shortage of foods that you can cook over a flame, including other main dishes, veggies, fruits & even dessert!
Here are a few of our unexpected favorites for the grill.
Quesadillas. Skip the pan for this family favorite and take the tortilla to the grill. Prepare your choice filling ahead of time, then brush a tortilla with olive oil. Put the oiled side down and add your filling & cheese to one half of the tortilla. Once the cheese starts melting and the oiled side is starting to brown you can use a spatula to fold it over while it finishes heating up. Another variation on quesadillas would be to make our Santa Fe Chicken Packets You can prep them ahead of time and wrap in foil. When the grill is hot- they are ready. Perfect for those days when you don’t want to heat up the house by using the oven. Everything tastes great off the grill!
Avacados. Is there anything Avocados can’t do? They are packed with vitamins & minerals as well as fiber that helps keep us full. If you love them in guacamole or on your sandwich, give them a try on your grill. Just slice avocados in half and remove seed. Leave skin on. Brush some olive oil on and place the cut side down on the grill. Remove them after about 5 to 6 minutes & top with sour cream, salsa or greek yogurt. Grab your tortilla chips and dig in. We might need a spoon.
Peaches. Cut the peach in half and rub with butter. Place the butter side down and close the lid. Grill for about four minutes on each side or until softened and somewhat charred. These are great plain or with a generous scoop of your favorite ice cream for dessert.

If you aren’t ready to venture too far off the beaten path, consider adding one or two new foods to your Kabobs. Pineapple, zucchini, watermelon, lemon wedges, peppers & many more are great to add to Kabobs. If you are trying to encourage kids try new foods- eating things off a stick is a great way to peak their interest and tastebuds.
