This hearty Turkey & Squash Casserole blends lean ground turkey with tender butternut squash and creamy goat cheese for a satisfying meal full of fall flavors. Found in our 2024 Fall Gatherings Magazine.
- Preheat oven to 375°; spray 8-inch square baking dish with cooking spray. In large skillet, cook turkey over medium heat 6 minutes or until browned, stirring occasionally; with slotted spoon, transfer to paper towel-lined plate.
- In same skillet with drippings, cover and cook squash and onion over medium heat 8 minutes or until tender. Add garlic; cook 1 minute or until fragrant, stirring occasionally.
- In large bowl, stir pumpkin, half the cheese, turmeric, thyme, salt, turkey and squash mixture; spread in prepared dish, cover tightly with aluminum foil and bake 30 minutes.
- Preheat broiler to high; top casserole with remaining cheese and broil 2 minutes or until top is lightly browned. Cut casserole into 6 pieces; garnish with thyme, if desired.
