  • 1 ½ pounds bacon, finely chopped
  • 1 package (8 ounces) cream cheese, softened
  • 3 green onions, thinly sliced
  • 1 cup shredded sharp Cheddar cheese
  • ¼ cup chopped drained pickled jalapeños
  • ¼ cup sour cream
  • 1 Tbsp. plus 1 tsp. ranch seasoning
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • ¼ tsp. paprika
  • Assorted crackers and/or French baguette slices for serving (optional)

  1. Line rimmed baking pan with parchment paper. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate.
  2. In large bowl, stir cream cheese, onions, Cheddar cheese, jalapeños, sour cream, seasoning, garlic powder, onion powder and paprika; form into 24 (1 ½-inch) balls and place on prepared pan.
  3. Transfer bacon to wide, shallow dish. Roll balls in bacon to coat; place on prepared pan and refrigerate 30 minutes or until firm.
  4. Serve truffles with crackers and/or baguette slices, if desired.
