  • 2 containers (8 oz each) whipped cream cheese spread, softened
  • 1 medium jalapeño pepper, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 can (15.25 oz) no salt added corn, drained and rinsed
  • Chopped cilantro for garnish (optional)

  1. In large bowl, with mixer on medium-high speed, beat cream cheese, jalapeño pepper, salt and black pepper 3 minutes or until light and fluffy; fold in corn and sprinkle with cilantro, if desired. Makes about 3 cups.
