- In large bowl, combine beans, onion, corn, red peppers, cilantro, jalapeños, and garlic. In medi-um bowl, combine vinegar, oil, and lime juice. Pour vinegar mixture over bean mixture and toss to combine; fold in avocado, salt, and pepper. Cover and refrigerate.
- In large bowl, combine ¾ cup oil, lime juice, and garlic. Place scallops in 9 x 13-inch dish; pour lime juice mixture over scallops; cover and refrigerate 10 minutes. Transfer scallops to separate container and discard marinade.
- Sauté scallops in some remaining oil 4 minutes or until golden brown, turning once. Serve over bean mixture garnished with chives.
