- Preheat oven to 425°. On rimmed baking pan, toss carrots and oil; roast 30 minutes or until tender, stirring once.
- In small saucepan, heat honey, orange juice, and zest to a boil over medium heat; cook 5 minutes or until thickenened, whisking frequently. Makes about ¼ cup.
- Serve carrots drizzled with honey mixture sprinkled with salt.
