Take your avocado toast to the next level with a crispy parmesan egg! This brunch recipe can be found our Spring 2021 Gatherings magazine.
- In medium bowl, mash avocados and lemon juice with fork. Makes about 1½ cups.
- Brush large, nonstick skillet with oil; heat over medium-low heat. Sprinkle skillet with cheese; cook 1 minute or until slightly melted. Add eggs over cheese; cover and cook 3 minutes or until egg whites are set. Uncover and cook 1 minute or until yolks are slightly soft; with spatula, cut eggs into 4 portions.
- Toast bread; top with ham, avocado mixture, arugula, and Parmesan eggs.
