  • 2 avocados, peeled and pitted
  • 1 tbsp fresh lemon juice
  • 1 tsp olive oil
  • ½ cup shredded Parmesan cheese
  • 4 large eggs
  • 4 slices sourdough bread
  • 4 slices deli-sliced smoked ham
  • 1 cup baby arugula or mixed greens

  1. In medium bowl, mash avocados and lemon juice with fork. Makes about 1½ cups.
  2. Brush large, nonstick skillet with oil; heat over medium-low heat. Sprinkle skillet with cheese; cook 1 minute or until slightly melted. Add eggs over cheese; cover and cook 3 minutes or until egg whites are set. Uncover and cook 1 minute or until yolks are slightly soft; with spatula, cut eggs into 4 portions.
  3. Toast bread; top with ham, avocado mixture, arugula, and Parmesan eggs.
