Foil packets make for easy meal prep and clean up. Try this vegetarian version!

  1. Preheat grill or oven to 400°.
  2. Trim the stem side of each garlic head so that the cloves are exposed.
  3. Place all the vegetables (except for the garlic heads) in a large bowl and drizzle with oil.
  4. Prepare the spice mix by combining all the ingredients in a small bowl. Sprinkle the seasoning over the vegetables and toss until they are all coated evenly.
  5. Divide the vegetables into 4 sheets of foil. Place each head of garlic open side down into the large bowl where the veggies were. Press down so the cloves absorb the remaining oil and seasoning. Place one head of garlic in the middle of each packet.
  6. Wrap each packet tightly. If baking in the oven, place packets on baking trays.
  7. Grill or bake 30-40 minutes or until the potatoes are tender. Remove from grill or oven and carefully open the packets.
