- Preheat grill or oven to 400°.
- Evenly distribute corn, potatoes, shrimp, and sausage between 4 sheets of foil (approximately 12x18 inches each).
- Drizzle melted butter or olive oil and about 2 tablespoons chicken broth over each foil packet.
- Season evenly and generously, to taste, with Cajun seasoning, salt, and pepper.
- Wrap each packet tightly. If baking in the oven, place packets on baking trays.
- Grill or bake 30-40 minutes or until potatoes are tender, flipping once halfway through. Remove from grill or oven and carefully open the packets.
