  • 4 ears of corn, cut in half or thirds
  • 4 red potatoes, washed and cubed
  • 1 pound raw 26/30 ct shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced into chunks
  • Melted butter or olive oil, to taste
  • 1/2 cup chicken stock
  • Cajun/Creole seasoning to taste
  • Kosher salt and freshly ground black pepper, to taste

  1. Preheat grill or oven to 400°.
  2. Evenly distribute corn, potatoes, shrimp, and sausage between 4 sheets of foil (approximately 12x18 inches each).
  3. Drizzle melted butter or olive oil and about 2 tablespoons chicken broth over each foil packet.
  4. Season evenly and generously, to taste, with Cajun seasoning, salt, and pepper.
  5. Wrap each packet tightly. If baking in the oven, place packets on baking trays.
  6. Grill or bake 30-40 minutes or until potatoes are tender, flipping once halfway through. Remove from grill or oven and carefully open the packets.
