Flavorful mini tacos with all the traditional toppings. A great kid-friendly Cinco de Mayo treat.

  1. Preheat oven to 350° and grease a muffin tin with cooking spray. Use a 4” biscuit cutter or the opening of a glass to cut smaller circles out of the tortillas. Place a tortilla into each cup of the muffin pan, folding the edges if necessary. Set aside.
  2. Heat oil in a large skillet over medium-high heat. Add onion and cook, stirring, until soft, about 5 minutes. Add ground beef and season with taco seasoning, salt, and pepper. Cook, breaking up the meat, until it is no longer pink, about 6 minutes. Drain fat.
  3. Spoon cooked beef mixture into each of the tortillas, then top with shredded cheddar. Bake until the tortillas are golden around the edges and the cheese has melted, about 10 minutes.
  4. Garnish with tomatoes, cheese, lettuce, and sour cream.
