These are the fluffiest pancakes of all. Incorporating air into the batter by using a blender and the use of a circular mold when cooking creates a super tall pancake - that's what makes Japanese Hot Cakes special!
- Use a blender to mix the eggs, buttermilk, sugar, vanilla extract and salt on low until combined.
- Add the rest of the ingredients and blend until just combined.
- Heat a skillet over low heat and coat it with non-stick spray. Coat the inside of a large metal or silicone cookie cutter, put it in the skillet, and fill it up halfway with batter.
- Cook the pancake until bubbles appear all over it, gently flip it, and cook until the bottom is golden brown.
