Turmeric Pumpkin Soup

- Cook onion in coconut oil in large skillet until softened.
- Add garlic, turmeric, ginger, cilantro and red pepper. Cook for a couple of minutes till fragrant.
- Add canned pumpkin, lentils and vegetable stock to pot, bring to boil and cover. Reduce to a simmer and cook for 10 min, or until lentils are soft.
- Add coconut milk and heat through, but do NOT boil.
- Just before serving, add the lime juice and salt.
- Tip: Depending on the saltiness of the stock you used, you may need to add more salt. Pumpkin and lentils require more salt to give them the best flavor.
