- Preheat oven to 375 degrees F.
- Peel and mash both bananas in a small bowl with a fork.
- Whisk in the eggs until combined well.
- Spray a mini muffin tin with cooking spray.
- Drop enough berries into each muffin compartment to cover the bottom in a single layer and pour the banana egg mixture into each compartment all the way to the top.
- Bake for 12 minutes or until mixture is set.
- Store in refrigerator for up to 5 days.
