Tilapia Tacos with Simple Mango Salsa

Add a fresh spin on taco Tuesday. Tilapia lightly seasoned and baked served with a simple mango salsa.

Add a fresh spin on taco Tuesday. Tilapia lightly seasoned and baked served with a simple mango salsa.

  1. To make seasoning: Mix together all seasonings and set aside.
  2. Preheat oven to 375 degrees F. Grease baking sheet with non-stick cooking spray.
  3. Rinse and pat dry tilapia fillets. Place fillets on the baking sheet. Brush the top of each fillet with olive oil.
  4. Season with seasoning blend and squeeze lime juice over the top of the fillets.
  5. Bake for 15 minutes or until fish is opaque and flakes easily with a fork (test in the middle of your thickest piece). NOTE: Cooking time may need adjustment depending on the thickness and size of your fillets.
  6. While fish is baking, prepare mango salsa (See recipe below) and heat tortillas.
  7. To assemble tacos: place desired amount of fish, broken up slightly, in the middle of your tortilla. Top fish with desired toppings and serve.
  8. SIMPLE MANGO SALSA: Dice Mango, onion, jalapeno and red pepper.
  9. Chop cilantro and add ingredients to bowl.
  10. Squeeze juice of the lime into the bowl and mix ingredients until well combined.
  11. Add salt and pepper to taste. Enjoy!
