A healthy main dish featuring spaghetti squash noodles with turkey meatballs.

  1. Preheat oven to 375° F. Wash the outside of the squash. Cut the squash in half lengthwise and use a spoon to scoop out and discard seeds from the middle of each half. Brush the inside of each half with olive oil, and place cut-side down on a baking sheet.
  2. Roast in preheated oven until tender, 35-50 minutes. Remove from oven and allow to cool before handling. Scrape cut side of squash with a fork to remove strands.
  3. In a processor or blender, combine tomatoes, salt, garlic powder, pepper, and oregano. Puree until smooth.
  4. Pour sauce mixture into a medium saucepan and bring to a simmer. Continue to simmer for ten minutes.
  5. Cook turkey meatballs according to package instructions.
  6. To plate, layer spaghetti squash, meatballs, and sauce.
