- In a medium saucepan, heat sugar stirring constantly until sugar forms clumps and melts into a thick brown, amber-colored liquid. Be careful not to burn it.
- Immediately add butter. The caramel will bubble rapidly when the butter is added.
- Stir the butter into the caramel until it is completely melted.
- Very slowly drizzle in ½ cup of heavy cream while stirring.
- Allow to boil for 1 minute.
- Remove from heat and stir in 1 tsp. of salt.
- Pour into jar of your choice.
- Store for up to 2 weeks in the refrigerator, warming slightly for use.
