Tilapia Burger with Mango Salsa

- In a bowl combine mango, avocado, bell pepper, red onion, cilantro and jalepeño. Mix well and add lime juice, a pinch of salt and pepper. Cover and refrigerate at least one hour.
- Preheat grill pan to 375°F. Mince the tilapia (Can use either a food processor or knife). In a bowl, combine minced tilapia, parsley, garlic, basil, breadcrumbs, egg, salt, and pepper. Mix well to combine all ingredients, form into 4 patties.
- Spray grill pan with cooking spray. Grill the patties 3-4 minutes on each side, grill without moving for at least 3 minutes. When ready to flip they should release fairly easily. Flip and cook 3-4 minutes. Remove from pan.
- Spread mayo on both sides of the fresh ciabatta rolls and place face down in the grill pan. Grill to your liking.
- Top each ciabatta roll with a tilapia patty and a generous helping of fresh mango salsa. Enjoy!
