Ramen "Burgers"

- Preheat the oven to 400°F.
- To make the ramen “buns”: put In a large pot of salted boiling water, cook ramen according to package instructions. Drain and rinse noodles with cold water.
- In a large bowl, toss noodles with eggs until evenly coated. Season with salt and pepper.
- In a large nonstick pan over medium heat, pour enough vegetable oil to thinly coat the bottom of the pan. Place a handful of the noodles in the pan. Use a spatula to press down and make the mixture flat and pressed. Cook until golden, about 4 minutes per side. Repeat.
- For the patties: Add a tablespoon of vegetable oil for the pan and heat over medium-high heat. Once the pan is warmed, add the burger patties and season with salt and pepper.
- Cook for 12 minutes, turning once after juices appear on the surface. For the last minute of cooking, top each patty with a slice of cheese. Cover the pan with a tight-fitting lid and cook until the cheese is melted, about 1 minute.
- Assemble burgers as desired.
