Looking for a little something sweet to quash those after dinner cravings?
We are here for you. These energy bites are easy to make. You'll need a food processor and don't be afraid to get your hands a little dirty too. We promise it's worth it.
What you need:
- 1 cup shelled pistachios
- 1/2 cup unsweetened coconut
- 1/4 to 1/3 cup coconut flour
- 1/2 heaping cup of cocoa powder or chocolate protein
- 1/3 cup honey
- 1/3 cup almond butter (or nut butter of choice)
- 1/2 tsp vanilla extract
What to do:
- Blend pistachios in a food processor. Transfer into a large bowl and add in all the remaining dry ingredients with the honey being the last . Add vanilla extract and and any other add ins. Mix well using hands then roll into bite size balls. Coat bites (once frozen) with cocoa or coconut flakes if desired.
- If the batter is too dry add more almond butter and/or honey. If it’s too wet, add more coconut flour.
- Makes about 15-18 medium size bites. Freeze or keep in refrigerator to maintain freshness.
