Ingredients:
1 (32-ounce) package tater tots
2 tsp olive oil
½ cup finely chopped yellow onion
2 garlic cloves, minced
2 links cooked Italian-style chicken sausage, cut into ¼-inch pieces
3 cups broccoli florets
10 large eggs
¾ cup reduced-fat milk
1 tsp Italian seasoning
¼ tsp ground black pepper
1 cup shredded sharp Cheddar cheese
Directions:
Preheat oven to 375°. Spray 13 x 9-inch baking dish with cooking spray. Spread tots in prepared dish.
In large skillet, heat oil over medium-low heat. Add onion; cook 3 minutes or until tender, stirring occasionally. Add garlic; cook 1 minute, stirring occasionally. Add sausage and broccoli; cook 4 minutes or until browned, stirring occasionally. Spread onion mixture over tater tots.
In large bowl whisk eggs, milk, seasoning, and pepper; pour over onion mixture. Sprinkle with cheese and bake 45 minutes or until internal temperature reaches 145° and top is browned; cut into 12 pieces. Makes about 9 cups.
