Ingredients:
- 1 ½ cups milk
- 2 tbsp distilled white vinegar
- 4 tbsp (1/2 stick) butter, melted and cooled
- 2 cups all-purpose flour
- ¼ cup sugar
- 2 tsp baking powder
- 1 ½ tsp baking soda
- ½ tsp salt
- 2 tsp vanilla extract
- 2 large eggs, whisked
- Nonstick cooking spray
Directions:
- Preheat a griddle to 325° or heat a skillet over medium heat.
- Combine the milk and vinegar in a medium bowl. Set aside for 5 minutes.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
- Whisk the vanilla and melted butter into the milk mixture. Whisk in the eggs and stir until well combined. Stir in the flour mixture with a wooden spoon until most of the lumps are gone and the batter is smooth.
- Coat the griddle or skillet with nonstick cooking spray. Pour ¼-cup portions of the batter onto the heated griddle. Cook until bubbles appear on the top, about 2 minutes, then flip and cook the other side for about 1 minute.
