Ingredients:
8 ounces 100% whole wheat penne rigate
1 tbsp olive oil
1 (11-ounce) package sweet Italian sausage, thinly sliced
2 garlic cloves, minced
1 (5-ounce) container fresh baby spinach
3 tbsp grated Parmesan cheese
1/8 tsp freshly ground black pepper
Directions:
- Cook penne as label directs; reserve ¼ cup pasta cooking water, then drain.
- Thinly slice 1 package sweet Italian-style sausage crosswise. Heat olive oil in a large skillet over medium-high heat; add sausage and cook 3 minutes or until lightly browned, stirring occasionally.
- Mince 2 garlic cloves; add to skillet and cook 30 seconds, stirring frequently.
- Add baby spinach to skillet; cook 2 minutes or until wilted, stirring occasionally. Add penne and reserved pasta water to skillet; cook 2 minutes or until heated through, stirring occasionally. Remove from heat.
- Stir 3 tablespoons grated Parmesan cheese and 1/8 teaspoon black pepper into pasta. Makes about 7 cups.
