In just three easy steps you can have fresh-out-of-the-oven cornbread. Bake them as mini loaves or as muffins!

Ingredients:
- 2/3 cup flour
- 1/2 cup yellow cornmeal
- 3 tbsp sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 2 tbsp vegetable oil
- 1/3 cup milk
- 1 egg
- Optional add-ins: ½ cup shredded cheese, corn, green chiles, jalapenos, cooked bacon, or tomatoes
Directions:
- Preheat oven to 400°.
- In a medium bowl, sift together flour, cornmeal, sugar, baking powder, and salt.
- Add in vegetable oil, milk, and egg and mix well.
- Muffins: Spoon into 6 lined muffin tins and bake for 15-20 minutes.
- Mini Loaves: Spray two 5x3” loaf pans, fill each evenly with batter, and bake for 20 minutes.
