Since we can’t wait a second longer for summer to arrive we’ve decided that summer starts now on the Fresh Dish blog! Hello No-Bake Key Lime Pie Cheesecake bites-we are ready for you.
Cheesecake and pie are two of our favorite desserts to enjoy... making them- well, that’s a little more complicated. Skip the special pans and time spent worrying about under or overbaking.
Our treats come together in 20 minutes and there is no oven required! These treats are served chilled and are tangy, smooth, creamy and just quite delightful. Ready to try them?

What you need:
¾ cup cinnamon graham cracker crumbs
3 tablespoons butter, melted
8 ounces cream cheese, softened
1 (14 oz.) can sweetened condensed milk
⅓ cup bottled key lime juice (or fresh lime juice)
1 teaspoon lime zest
1 (8 oz.) container frozen whipped topping, thawed
½ cup coconut (optional)
What to do:
Line 12 muffin pan cups with paper liners.
In a small bowl, combine graham cracker crumbs and and melted butter.
Press one tablespoon of crumbs into the bottom of each liner.
With an electric mixer on medium speed, beat the cream cheese until smooth.
Add the condensed milk and lime juice and mix well.
Fold in the lime zest and 1 cup of the whipped topping.
Divide the mixture evenly among the lined muffin cups.
Cover pan with foil or plastic wrap and freeze until firm, at least 3 hours.
Top with whipped topping, a slice of lime, and finish with a sprinkle of coconut. Enjoy!!
